Care Instructions

Sydney Rock Oysters are much tougher than their Pacific Oyster counterpart. They can last up to 2 weeks out of the water in the correct conditions. You should remember that oysters are exposed to the elements daily whilst being cultivated and they happily bask in the elements waiting for the tide to turn and come back in! Care instructions will come with your fresh oyster purchase which will detail the ideal conditions under which to store your delicious bounty!

How do I store my live/unopened Sydney Rock Oysters?

Select a location to store your fresh Sydney Rock Oysters which has consistent temperatures, ideally between 10-20 degrees until you are ready to serve them. Under the correct conditions our oysters will keep for between 10-14 days. Please don’t store live oysters in the fridge.

How long will my oysters keep once opened/shucked?

Oysters taste best when served straight after being opened/shucked but can be stored in a refrigerator covered for up to 2 days.

Oyster Condition

Our oysters are sourced from each of our owned and operated farms across 4 estuaries ranging from the upper mid north coast down to the beautiful waters of Port Stephens NSW, this allows us to supply our customers with fresh creamy oysters year-round. Please keep in mind that the flavour and appearance of our oysters will change with the seasons. You can expect a fat and creamy oyster in the warmer months and during the cooler months you can expect a lean oyster with a crisp salty flavour. You will receive a pamphlet with your oyster order which will tell you which estuary your oysters originated and also how they can be best enjoyed!

Oyster Availability

Recovery from the last 3 years of natural disasters has been tough on most primary producer industries, oyster farming included. We have had some of the wettest conditions in Australian history. Our rivers are tested on a regular basis to ensure optimal conditions before harvesting can commence this ensures you get the freshest premium grade oyster possible, but the delays in testing can cause supply chain issues during wet weather events. To combat this a few select farms have a type of “live tank” which is a tank which emulates optimal river conditions to store oysters until the river re-opens. If we are out of stock on our website it would be best to subscribe to our
newsletter so that you will be the first to be notified when our harvest area’s open back up.

Is it safe?

Yes! We operate to a strict food safety program which ensures you only recieve a premium product.

All orders are delivered in our insulated packaging with a food grade cooler in them.

Please note that orders are not shipped through a refrigerated courier. Sydney Rock Oysters can not survive long periods at cool temperatures.

IMPORTANT: It is the buyers responsibility to take delivery of the order on it's arrival and to store correctly before consumption. We can not be responsible for misshandled product.
